We are extremely proud of our food mileage! The distance our ingredients need to travel from field to your table. Just as important, is the quality and care put into those ingredients by the people that grow, harvest, & mill them. This seasons growers: 2024 are below.

NEK GRAINS

*FOOD MILEAGE: 51 miles *WATERFORD, VERMONT *The gingue family Shawn & Sara grow a red winter wheat variety called warthog and mill it on a granite stone American Stone mill. It's distinctively nutty and creates an amazing soft crumb. "The Gingues have been working closely with an agronomist on sustainable farming practices, including no-till planting and cover cropping. While the product isn't certified organic, they use no pesticides, fungicides or herbicides. Pastured beef cows play an important role in the crop rotation plan. MAINE SEA SALT 

*FOOD MILEAGE: 331 miles*MARSHFIELD, MAINE*Steve & Sharron cook Solar evaporated and hand harvested in Maine. The sea water comes from bucks harbor, at slack tide. It's filtered and reduced in greenhouses. The pools evaporate and the salt is drained. "The sun and it's position in the sky determine our season and like farmers the weather is very important."

YOST FAMILY FARM

*FOOD MILEAGE: 381 miles*BLAINE, MAINE *Tyler Yost Mars hill mountain stands over acres of sunflowers in Blaine maine. Per acre the average is 40-80 gallons of oil depending on the growing conditions. The seeds are cold pressed & excellent source of vitamin E. The seasonal life of a flower aligns with our Nordic cooking mission to stay within our climate means. Sustainable.

NITTY GRITTY GRAIN

THORNHILL FARM

*FOOD MILEAGE: 25 miles*GREENSBORO BEND, VERMONT*Todd Hardie We have around 96 acres now dedicated to growing winter rye,  barley and legumes/green manures to feed the soil and to give the land a rest as we rotate every third year out of grain. NORTHWOODS HONEY
